½ c. butter or margarine
1 c. shredded Edam or Gouda cheese
Finely minced parsley
1/8 tsp. paprika
Firm pumpernickel bread, finely crumbled
Cream the butter or margarine; combine with shredded cheese and paprika. Shape into small balls. Roll half in pumpernickel crumbs and half in finely minced parsley. Chill. Makes 24 truffles.
