I'm in central Indiana and hoping to place an order in the next couple weeks. Before I do, I had a couple questions: 1. Am I able to order the gouda cheese curds apart from the gift box? If so, do I need to call in to place my order since they aren't listed on the website? 2. What's the usual shelf life on the cheese curds and dried beef? I wasn't sure how early I could order them if we don't give them as gifts until 12/22. I would think the dried beef would be okay, but maybe not the curds? :) Thanks so much!

As for shelf life, curds are best enjoyed within 10-14 days of production, they are still delicious after that but as they age, the flavor and texture develop from the light softness of fresh gouda curd to a slightly aged version, still delicious, just different. So, I'd order as close to the gift giving time as possible.
