We Process All Types of Wild Game! Fine Processing Season Is Always Open at Ulrich's! Year-Round Processing - Hunters' Favorite! And we process year-round using the same recipes that John Ulrich brought over from the �Old Country� and have made Ulrich's a hunter's favorite for more than 140 years. We Mostly Process: Venison | Bear | Elk | Moose | Caribou | Antelope | Turkey | Pheasant | Quail | Fish Keep Your Meat Clean! Follow safe food handling practices with your meat. We will not accept any mishandled or unsanitary wild game carcasses or trim. Ulrich's Master Smokers Our Master Smokers tend to each item carefully as they brine and cure your fish and fowl for smoking. And using only the finest hand-selected hickory logs, they then smoke to perfection. Smoking Fees and Charges Smoked Fish and Small Game $5 each (Rabbit, Carp, Pheasant �and more!) Smoked Wild Turkeys and Turkey Breast $15 each Sausage We add 25% lean pork trimmings to these products for a juicy flavor: As an option add cheddar or pepper cheese! We use a high-temperature-resistant cheese that doesn't melt down when you cook it. We add 20% cheese to the Sausages Bologna Ring Bologna: $2.45 lb. Fire Bologna (Hot and Spicy): 2.55 lb.
